Dal Baati Churma is the dish that decides whether a Rajasthani kitchen is real. Baked in an oven, baati is just a hard bun. Baked over coal and wood it develops a cracked crust and a crumbly, smoky interior that soaks ghee properly — which is how we make it, every batch, all day.

The dal beside it is panchmel: five lentils cooked together, tempered with hing and mustard rather than the tomato-and-garam-masala base most Patna kitchens default to. The churma is made in house from coarse wheat crumb bound with jaggery, ghee and cardamom, then pressed into laddoos.
